Just Crack an Egg
 

If you’re not familiar with the product “Just Crack an Egg”, it's a plastic cup that contains a few basic ingredients (cheese, meats, potatoes, etc.) that you can buy at most chain grocery stores. When you’re ready to eat, just remove the top, crack an egg or two into the cup, stir it up and microwave! Easy, right? Yes, totally! But… I’m not a huge fan of the high-sodium, highly-processed ingredients or the idea of microwaving in plastic. So, I put together my own homemade version and they turned out amazing!

 
 

You might be thinking… microwaved eggs?? If that’s you, don’t knock em ‘till you try em! I’m pretty picky about my eggs but I was amazed how these turned out! Plus, they are such a great back up for days when I don’t have time to cook or if I need something to grab and heat up later.

The best part- this recipe is TOTALLY customizable!

Here is a basic recipe that you can tailor to your preferences or portion size:

Copycat JUST CRACK AN EGG

Servings: 1

Time: 5-10 minutes to prep, 2-2.5 minutes to cook

Ingredients:

  • 1-2 tablespoons small diced breakfast meat (ex. ham, chicken or turkey sausage, turkey bacon, etc.)

  • 2-4+ tablespoons of small diced vegetables (ex. onion, bell pepper, broccoli, mushrooms, spinach, tomato, etc.)

  • 2+ tablespoons of cheese (ex. cheddar, pepper jack, 'feta, goat, etc.)

  • 1-2 tablespoons cooked potatoes or hash browns (optional)

  • 1-2 eggs per jar

  • 1 tablespoon milk (optional)

  • salt and pepper to taste

  • Cooking oil spray (I like to use avocado oil spray)

Directions:

  1. Spray a 16-ounce microwavable mason jar (or container) with non-stick cooking spray (I like to use avocado oil spray).

  2. Place your chosen ingredients in the jar and season with salt and pepper (or other spices/herbs), leaving the eggs out.

  3. If meal prepping: add 1-2 whole eggs to the jars (in their shell) and secure the lid. You can then take these out when you’re ready to cook.

  4. Preparing to cook: crack the egg(s) into the jar and mix all the ingredients well.

  5. Place in the microwave and cook for 30 seconds. Carefully remove from the microwave, stir, and place back in the microwave for 30 more seconds. Repeat these steps until the egg is cooked to your liking, usually 2-2.5 minutes total. (Caution: The jar will be very hot!)

  6. Allow to cool slightly and enjoy!


Notes:

  • I recommend making a few of these at a time to have on hand for breakfasts or snacks throughout the week!

  • Toppings: Add hot sauce, salsa, ketchup, avocado, etc. per your liking,

  • I prefer to use 16 ounce mason jars so you can see the mixture as it cooks. You can find the jars I use and the lids I prefer (dishwasher safe) on my Amazon store.


Flavor variations:

  • All American: cheddar cheese, cooked bacon or sausage, cooked and diced potatoes

  • Denver: onions, green bell pepper, ham, shredded cheddar

  • Southwest: poblano peppers, black beans, bell peppers, spinach, cooked turkey sausage

  • Veggie: cheese, broccoli, bell pepper, onion, mushrooms, spinach, tomatoes
